Ingredients

2 cups pancake mix (classic, protein, or flavored)

1½ cups water or milk

½ cup mix-ins (fruit, sausage, chocolate chips)

Cooking spray or muffin liners

Instructions

Preheat oven to 350°F (175°C).

Grease mini muffin tin or line with silicone liners.

Mix pancake mix and liquid until just combined.

Fold in ¾ of the mix-ins.

Fill muffin cups ¾ full. Top with remaining mix-ins.

Bake 12–15 minutes until golden and toothpick comes out clean.
