These might just be the easiest muffins you’ll ever make! This banana cottage cheese muffin recipe is bound to become your new go-to favorite.
Ingredients
1 cup cottage cheese
2 ripe bananas
2 large eggs
¼ cup honey
1 ½ teaspoons vanilla
1 teaspoon baking powder
1 teaspoon cinnamon
2 cups old-fashioned oats
Instructions
Prep:
Preheat the oven to 400F and position the top oven rack in the middle of the oven. Grease a 12-muffin pan or use foil liners -do not use paper liners, they’ll stick.
Add the following ingredients to a blender in the order listed: cottage cheese, bananas, eggs, honey, vanilla, baking powder, cinnamon, and oats. Blend for 45 seconds on high speed, until the batter is smooth.
Bake:
Pour the batter into the muffin pan, filling each cup ¾ of the way to the top.
Bake for 20 minutes, until the tops are brown and a toothpick inserted in the middle comes out clean.
Remove from the oven and let them cool in the pan for 10 minutes before removing them.
